Boil the chicken until tender, set aside, and strain the broth.

Chop the leeks and fry in olive oil until soft.

Add the peas, fry for another minute and pour all the hot broth.

Boil the soup for 10 minutes, add chopped herbs and chop everything with a blender.

Top up the cream to the desired consistency and season the dish to taste.

Bring to a boil again, add the grated mozzarella and cook the soup until it melts.
