Prick the eggplants with a fork and bake them with pepper in the oven for about 20-30 minutes until cooked at 200 degrees.

Put them in a bag, let them cool down a little and then remove the skin.

Pass through a meat grinder.

Finely chop the onion, grate the carrots and fry them in oil for 10 minutes.

Add the tomato and fry for another 5 minutes.

Add the vegetables, sugar and salt, simmer all together for 15-20 minutes and pour in the vinegar.

Roll the caviar into sterile jars.
