Of all the ways to prepare eggplants, my favorite solution is to marinate them like mushrooms. There are also dozens of different recipes here, and I have tried many of them in practice for a long time. Today I want to share the most successful of them.

Ingredients

  • Eggplant - 1.5 kg
  • Salt - 2 art.l.
  • Vinegar - 150 ml
  • Garlic - 1 head
  • Dill - 1 bundle
  • Chili pepper - 1 piece
  • Water - 2 l
  • Sugar - 1 art.l.
  • Vegetable oil - 100 ml

Step-by-step cooking recipe

Peel and randomly slice the eggplants.

Boil water with sugar, salt and vinegar.

Lay out the eggplants and boil for 5-7 minutes. Put them in a colander.

Chop garlic, dill and chilli.

Mix everything with eggplant and put it in sterilized jars.

Add a little hot oil to each and roll it up.
