The easiest way to decorate any cheesecake is to pour jelly on top of it. And today I want to share with you my favorite recipe with fresh berries. Frozen ones are also suitable, but wait until the water completely drains from them.
Ingredients
- Cookies (sand) – 180 g
- Butter - 70 g
- Cottage cheese - 360 g
- Sour cream - 250 g
- Gelatin - 25 g
- Cream (33%) – 150 g
- Vanilla Extract - 1 tsp.
- Powdered sugar - 100 g
- Berries - 150 g
- Cherry juice (or other berry) – 150 ml
- Gelatin - 12 g
- Water - 60 ml
- Sugar - 50 g
Step-by-step cooking recipe
Grind cookies with butter in a blender and tamp the base into a mold.
Soak the gelatin for the filling in cream, leave to swell for 20 minutes and heat until dissolved.
Whisk all the ingredients for the filling until smooth and pour on the base.
Put the berries on top. Put the cheesecake in the freezer for 15-20 minutes.
Prepare gelatin for jelly in water according to the instructions.
Heat the berry juice with sugar, add gelatin and mix until dissolved.
Pour the juice on the cheesecake and put it in the refrigerator overnight.
