A great recipe if you run out of tomatoes. Mother—in-law's tongue of zucchini with tomato paste and pepper is a very tasty vegetable salad for the winter. It can be sterilized in jars, but I prefer to just boil it. Such canned goods are perfectly stored!

Chop the zucchini and peeled bell pepper.

Peel the garlic from the husk and finely chop it.

Mix the zucchini with garlic and salt. Cover with a lid and leave for 15 minutes.

Put the workpiece on a preheated frying pan with oil and fry until golden brown.

Separately fry the bell pepper in oil. It takes 5-7 minutes for the moisture to evaporate and the vegetables to brown a little.

In a large cauldron, mix bell peppers and zucchini.

Pour in water mixed with tomato paste and sugar. Press everything together for 20 minutes.

Add the vinegar, arrange the salad in the prepared jars and roll up.
