Are you doing conservation for the first time? Then you will like this recipe! Yurcha from zucchini is a light vegetable snack, reminiscent of lecho. It is prepared without sterilization and other complex processes. The taste can be enriched with garlic, parsley or dill.
Ingredients
- Zucchini - 1 kg
- Bell pepper - 500 g
- Tomatoes - 800 g
- Onion - 300 g
- Vinegar - 120 ml
- Vegetable oil - 100 ml
- Allspice - 3 peas
- Black Pepper - 10 peas
- Mustard Seeds - 0,5 tsp.
- Sugar - 4 art.l.
- Salt - 2 art.l.
Step-by-step cooking recipe
Chop the zucchini, peeled onion and bell pepper.
Peel the tomatoes and chop them in a blender.
Mix the tomato mass with spices, butter, sugar and salt. Boil for 5-7 minutes.
Add zucchini, bell pepper, onion and cook for 15 minutes on low heat.
Pour in the vinegar, simmer for another 2 minutes and remove from the stove.
Arrange the hot salad in jars, roll it up, turn it upside down and wrap it with a thick towel.
