Caviar from fried vegetables with spices is a completely independent and self–sufficient snack. But for a holiday and especially a buffet, I would like to serve it somehow more conveniently. I offer such beautiful little canapes for one bite.
Ingredients
- Baguette - 10 slices
- Eggplant - 1 piece
- Carrots - 0,5 pieces
- Bell pepper - 0,5 pieces
- Tomatoes - 1 piece
- Onion - 0,5 pieces
- Garlic - 2 cloves
- Spices and seasonings - 1 tsp.
- Green onion - 3-5 feathers
- Olive oil - 2 art.l.
Step-by-step cooking recipe
Finely chop all the vegetables and fry the onion until soft in olive oil.
Add eggplant, carrot and bell pepper to it, and continue to fry over medium heat.
After 10 minutes, add chopped garlic, tomato and, if desired, chili.
Simmer further and further until the ingredients are soft and season at the very end.
Chop the vegetable caviar with a blender and spread it on toasted baguette pieces.
Decorate the canapes with chopped greens.
