Wash the chickpeas and soak them in cold water for 10 hours.
Change the water and boil the chickpeas for 2 hours on low heat.
Flip the chickpeas into a colander, and then spread out to dry in a thin layer on a towel.
Put garlic, olive oil, lemon juice and salt in a blender. Beat on medium speed for 2-3 minutes.
Add cumin and leave to infuse at room temperature for 10 minutes.
Add the tahini and continue whisking until the mixture thickens.
Pour in cold water and whisk for another 4-5 minutes. The mass should become a beautiful creamy color.
Pour in portions of dried chickpeas and beat until smooth. If desired, you can add more salt, lemon juice or oil.
