Many people buy salted smelt and do not even know that fresh fish can be baked very tasty with vegetables. It was also a big discovery for me one day. Since then, at every opportunity, I cook this simple and delicious dish!

Peel the smelt from the scales, gut, rinse and dry with a paper towel.

Cut the carrots into short cubes. Peel the potatoes and cut into small cubes.

Sprinkle the smelt with salt, ground black pepper and fennel. Gently spread the spices with your hands over the entire surface.

Put potatoes and carrots in a bowl, season with salt and pepper, add oil and mix.

Put potatoes and carrots in a greased form.

Spread the smelt on top. Put a few cubes of potatoes in the belly of each one.

Cover with foil and place in a preheated 180 degree oven for 25 minutes.

Carefully remove the foil and bake for another 7-10 minutes. Sprinkle the finished dish with thyme sprigs.
