A good hostess always has a couple of jars of delicious vegetable snacks in stock. Eggplant salad with tomatoes may be a good option. With the addition of garlic and herbs, vegetables turn out to be moderately spicy, very fragrant and delicious.

Ingredients

  • Eggplant - 1 kg
  • Tomatoes - 1 kg
  • Garlic - 100 g
  • Greenery (any) – 100 g
  • Vegetable oil - 100 ml
  • Vinegar - 150 ml
  • Sugar - 3 art.l.
  • Salt - 2 art.l.

Step-by-step cooking recipe

Make a cross-shaped incision on each tomato, pour boiling water over it and peel it.

Chop the eggplant, tomatoes, herbs and peeled garlic.

Mix all the blanks in a deep saucepan, add butter, sugar and salt.

Arrange the salad in jars and sterilize for 15 minutes.

Carefully remove the jars from the sterilization bath, add a little vinegar to each.

Roll up, turn upside down and wrap up with a thick towel.
