Fragrant caviar from chanterelles will sparkle with new colors if you add a little garlic. More or less is at your discretion. In the recipe I will share my proven version, but you can adjust it to taste.
Ingredients
- Chanterelles - 1 kg
- Garlic - 1 head
- Onion - 300 g
- Carrots - 300 g
- Greenery - 1 bundle
- Salt - 1 tsp.
- Black Pepper - 6 peas
- Vinegar - 1 tbsp.l.
Step-by-step cooking recipe
Wash the chanterelles, dry them and pass them through a meat grinder.
Simmer them for an hour on low heat under the lid.
Chop the onion and carrot, fry until soft and add to the chanterelles. Simmer for another 10 minutes.
Add spices, salt, crushed garlic and chopped herbs. Simmer for another 10 minutes.
Pour in the vinegar, mix the caviar, put it in sterile jars and pour in a spoonful of boiling oil.
Roll up the caviar for the winter.
