Today I suggest you try a great recipe for a lean Mimosa cake. We will knead the dough with fruit juice and vegetable oil, and use fresh apples for the cream. I recommend baking the cake in a split form.
Ingredients
- Apples (average) – 5 pieces
- Powdered sugar - 3 tbsp.l.
- Corn Starch - 50 g
- Lemon juice - 2 art.l.
- Water - 200 ml
Step-by-step cooking recipe
Mix the sifted flour, sugar, soda, salt and baking powder.
Pour in the juice, vegetable oil, vinegar and mix until smooth.
Pour the dough into a split mold and bake for 35-40 minutes in an oven preheated to 180 degrees.
Cool the cake, take it out of the mold and cut it across into two identical parts.
Cut off the inner layer, chop and set aside. It will be a crumb for decoration.
Cut the apples into quarters, peel the seeds, slice and sprinkle with lemon juice.
In a deep saucepan, mix water, powdered sugar and apples.
Boil for 5-7 minutes, and then puree with an immersion blender until smooth.
Pour in the starch, stir and put aside to cool.
Assemble the cake by smearing the cakes with cream.
Brush the top with cream and sprinkle with prepared crumbs. Before serving, a lean Mimosa cake should stand in the refrigerator for a couple of hours.
