If you are already tired of the usual everyday soups, try this Moroccan-style recipe. It is based on legumes, specifically beans and chickpeas. You can take green beans or something else to your taste. But be prepared to wait until they are cooked.
Ingredients
- Vegetable broth - 2 l
- Beans - 1 glass
- Chickpeas - 1 glass
- Carrots - 3 pieces
- Lemon - 0.5 pieces
- Garlic - 4 teeth
- Tomatoes - 2 pieces
- Chili pepper - 2 pieces
- Basil (parsley or other greens) – 1 handful
- Curry - 1 tsp.
- Paprika - 1 tsp.
- Hot red pepper - 2 pinches
- Sea salt - 1 tsp.
- Lemongrass - 2 twigs
Step-by-step cooking recipe
Soak the chickpeas and beans overnight and cook during the day until cooked according to the instructions. It usually takes up to an hour.
Bring the vegetable broth to a boil and add the chopped carrots and legumes there.
After 5 minutes, add the chopped tomatoes, chili, garlic and all the spices.
After another 5 minutes, add the basil and lemongrass, stir and season the soup with lemon juice.
