A neighbor once shared this recipe with me. She lived in Armenia for a while and managed to study their cuisine quite well. Lecho in Armenian is prepared without onions, carrots and vegetable oil. Greens are also necessarily added.
Ingredients
- Tomatoes - 2 kg
- Bell pepper - 1,5 kg
- Hot red pepper - 1 pod
- Garlic - half a head
- Cilantro - 50 g
- Vinegar - 100 ml
- Sugar - 50 g
- Salt - 40 g
Step-by-step cooking recipe
Peel the tomatoes, slice them and put them in a deep saucepan.
Add sugar, salt and cook for 15 minutes on low heat.
Chop hot pepper, coriander and peeled bell pepper.
Pour the blanks into a saucepan with boiling tomato mass and cook for another 15 minutes.
Add vinegar, garlic passed through the press and simmer for 10 minutes under the lid.
Fill sterilized jars with hot lecho and roll them up.
