Out of dozens or even hundreds of ways to cook eggplant caviar, this is one of my favorites. And all because the ingredients are baked in the oven. Firstly, there is no need to stand at the stove for so long. And secondly, vegetables acquire completely different taste notes.

Step-by-step cooking recipe

Prick the eggplants with a toothpick and bake in the oven for 45-50 minutes at 180 degrees.

Peel them and chop them finely.

Chop the onion and fry in oil until golden.

Peel the tomatoes and grate them.

Mix all the ingredients, simmer the caviar for 10 minutes and put it in sterilized jars.
