Chop the beetroot, cabbage and peeled onion. Grate the carrots on a coarse grater.

Fry onions and carrots in oil in a deep cauldron.

Add beetroot, citric acid and simmer for 10 minutes.

Add water, cabbage, spices, sugar, salt and cook for another 30 minutes, stirring occasionally.

Put the dressing in clean, dry jars, roll it up and wrap it well with a warm blanket for a day.
