Eggplant rolls with pesto

To make the eggplant appetizer tastier, I cook pesto sauce on my own. In the recipe I will tell you how to do everything right. It's so easy and simple that you'll never want to buy it in the store again!

Ingredients

Eggplant - 2 pieces
Cheese - 100 g

For pesto:

Olive oil - 50 ml
Basil - 0.5 beam
Rosemary - 1 twig
Lemon juice - 1 tbsp.l.
Garlic - 2 clove
Nuts - 30 g
Parmesan - 30 g
Spices and seasonings - 0.5 tsp.

Step-by-step cooking recipe

Cut the eggplant into plates and fry in a frying pan on both sides until cooked.

Chop all the pesto ingredients in a blender. You can adjust the consistency with oil.

Put eggplant pesto and a piece of cheese on slices, and roll the rolls.
