Vegetable caviar is most often prepared from zucchini or eggplant. But in general, any vegetables will do – here the essence is in technology, not in specific ingredients. For example, in my recipe book there is a favorite carrot caviar, which I often cook for the winter.

Ingredients

  • Carrots - 1 kg
  • Tomatoes - 2 pieces
  • Vegetable oil - 100 ml
  • Sugar - 1 tbsp.l .
  • Salt - 0.5 tbsp.l.
  • Garlic - 2 teeth
  • Vinegar - 1 art.l.

Step-by-step cooking recipe

Pass carrots, tomatoes and garlic through a meat grinder.

Add salt, sugar and butter, and boil the billet for 40 minutes on low heat.

Add vinegar 10 minutes before the end.

Roll carrot caviar into sterile jars.
