Anna Pavlova's dessert is extremely popular all over the world now. It is prepared in different ways, but I really like the recipe with fresh raspberries and mascarpone. The dessert turns out to be very tasty, tender and beautiful. Berries and fruits can be used any way you like.
Ingredients
- Egg whites - 4 pieces
- Sugar - 1 glass
- Citric acid - a couple of crystals
- Mint (for decoration) – 1 twig
- Raspberry (for decoration) – handful
- Mascarpone - 250 g
- Cream (36% fat content) – 250 ml
- Powdered sugar - 100 g
- Lemon juice - 1 tbsp.l.
Step-by-step cooking recipe
In a deep bowl, whisk the cooled whites to a fluffy foam.
Without stopping the mixer, add sugar in small portions.
Add citric acid and whisk everything together for another 5 minutes. The finished mass should be dense and shiny.
Put the whipped whites in a pastry bag and place on a baking sheet covered with parchment.
First draw a circle with a protein about 22 centimeters in diameter. Then remove the bottom of the future dessert and sides. It turns out a kind of basket.
Put the dessert in a preheated 150 degree oven for 20 minutes. Reduce the temperature to 100 degrees and continue to dry the meringue for another 1.5 hours.
Beat the cooled cream with powdered sugar until sharp peaks.
Add lemon juice and mascarpone. Continue whisking for another 5 minutes.
Using a pastry bag, carefully put the cream on the finished meringue. Spread raspberries and mint leaves on top.
