Break the eggs into a bowl, carefully separating the whites from the yolks.
Whisk the whites with salt until sharp peaks.
In a separate bowl with a clean mixer, beat the yolks with sugar.
Mix both blanks, orange zest, flour and vanilla.
Cover the split mold with baking paper, pour in the dough and bake for 35-40 minutes in an oven preheated to 180 degrees.
Put the finished biscuit to cool on the grill.
In a deep saucepan, heat the cream and the chocolate broken into pieces.
Add the butter and mix until smooth.
Put the cooled sponge cake on a plate and generously pour the chocolate glaze.
