This unusual dessert is perfect in the summer. Served cold, it amazes with the number of fillings and the most delicate texture of the dough. Once you try it, you will want to cook these exotic cakes again and again. Surprise your loved ones with legendary Japanese mochi!

Prepare the filling. In a saucepan, heat the milk, add and melt the chocolate. Enter the gelatin, mix well until completely dissolved. Add the matcha, mix again.

Whisk the cream to steady peaks and gradually add to the milk-chocolate mixture. Transfer the filling to a pastry bag and send it to the refrigerator for cooling.

For the dough, mix water and rice flour. Cover the bowl with the dough with cling film, make punctures in several places and send it to the microwave for 2 minutes at maximum power. Then mix the dough and send it to the microwave for another 1 minute.

Put the hot dough on a starch-dusted table, divide into 12 equal parts, roll out the tortillas.

Using a pastry bag, place the filling in the center of each tortilla, form a mochi according to the khinkali principle, connecting the edges of the tortilla. Give the cakes a beautiful round shape.

Roll the finished mochi in a mixture of starch and matcha and store in the refrigerator until serving.
