Marshmallow based on apple and cranberry puree turns out delicious and fragrant, with a delicate texture thanks to agar-agar. It is not difficult to prepare it, but the proportions and temperature regime should be strictly observed.

Wash the cranberries and chop them in a blender or in another convenient way. Pour into a saucepan and boil until soft.

Let the cranberries cool down a little, then grind in a blender to a puree state.

Cut the green apples into pieces, removing the seed pod. Bake in the microwave (5-6 minutes) or in the oven until soft. You can also boil apples, but then you will have to boil the puree thoroughly so that it is not too liquid.

Chop the soft apples in a blender, and then rub through a sieve.

Add 100 g of sugar to the cranberries and warm them in a saucepan or in a water bath to melt the sugar.

Combine cranberries and apple, mix. Here we got 300 g of mashed potatoes. You can take less (250 g).

In a saucepan, mix the water, the remaining sugar and agar-agar. Put on a low heat, stirring.

Put fruit and berry puree in the blender bowl, add one protein - this is about 40 g. Start whipping at first at low speed, gradually increasing it. The mass should lighten and begin to increase in size. Bring the syrup to a temperature of 110 degrees – it is convenient to use a kitchen thermometer with a probe. Then pour the syrup in a thin stream into the bowl, trying not to fall on the blades of the mixer. The agar-agar remaining at the bottom of the saucepan does not need to be added to the marshmallow mass.

After the syrup is added, continue to beat the mass for another 2-3 minutes. It should turn out to be of medium density, with peaks, but not very rigid. It should be remembered that agar-agar begins to harden at 40 degrees. Therefore, you need to immediately proceed to depositing marshmallows.

It is better to plant marshmallows with a pastry bag and a nozzle, for example, an open or closed star. As a surface, parchment, silicone or Teflon mat is suitable. After depositing, let the marshmallows freeze – it can take from 5 to 24 hours.

After that, separate it from the surface, glue the halves and roll in a mixture of powdered sugar and starch. Put it in a container with a lid. It's better to eat marshmallows in the next few days.
