Most often, vegetable caviar means caviar from zucchini and eggplant. Or rather, it's something like a vegetable paste. You can serve the snack in different ways - on bread or in tartlets, as a sauce, instead of a salad or as an addition to a side dish.

Ingredients

  • Zucchini - 2 pieces
  • Eggplant - 2 pieces
  • Garlic - 4 cloves
  • Spices and seasonings - 2 tsp.
  • Olive oil - 50 ml

Step-by-step cooking recipe

Peel the eggplant and zucchini, cut into cubes.

Add salt to the eggplants, leave for 5-7 minutes and rinse.

Fry the vegetables until browned and let cool slightly.

Chop the eggplant and zucchini in a blender, add spices and crushed garlic.

Add the butter and stir the caviar.
