Did you know that avocados can be used not only for salads, snacks and guacamole? Try it as a base for a hearty breakfast. I am sharing with you an unusual recipe for fried eggs baked in avocado halves. Delicious, not trite and not at all difficult.
Ingredients
- Avocado - 2 pcs.
- Chicken eggs (not large) – 4 pcs.
- Salt - to taste
- Provencal herbs - to taste
- Ground black pepper - to taste
- Cheese - optional
- Greenery - for decoration
- Cherry tomatoes - for submission
Step-by-step cooking recipe
Cut large ripe avocados in half, remove the stone. Carefully remove part of the pulp with a spoon. In the resulting recesses, drive 1 egg each. If desired, you can replace chicken eggs with quail eggs (then you may need 2 quail eggs for 1 avocado boat).
Transfer the avocado halves to a parchment-lined baking sheet and bake in a preheated 180°C oven for 10-15 minutes until the eggs are ready.
Transfer the baked avocados with egg to plates, season with salt and pepper to taste, add Provencal herbs, garnish with chopped herbs. Put the halves of cherry tomatoes on a plate next to it. Serve the avocado appetizer hot, sprinkled with grated cheese if desired.
