Boil water and dissolve sugar in it. Boil the syrup for 5 minutes.
Add the chicory, mix and remove the workpiece from the heat.
Let the workpiece cool down to about 35 degrees. Add yeast and citric acid, and mix.
Leave the workpiece for 2 hours in a warm, dark place under gauze. Stir every half hour.
