Aivar is a traditional sauce of Serbian cuisine, which, spreading around the world, acquires many different variations. I propose to prepare such a sauce based on tomatoes and bell pepper with the addition of mustard. In winter, it is ideal for side dishes, pizza, etc.

Sweet pepper (along with the stalk) bake in a preheated 200 ° C oven, then remove the baking sheet, cover the pepper with a towel and leave for a few minutes to steam. After that, remove the skin, remove the seeds and stems.

Peel the onion, garlic and chili pepper. Grind the pepper mixture with peas in a coffee grinder.

In the bowl of a blender, chop the pepper pulp, then send tomatoes, onions, garlic and chili pepper to the same place. Whisk all the vegetables together. Instead of a blender, you can use a meat grinder - this will not affect the taste of the future sauce, and the consistency will be as close as possible to the traditional one.

Put the vegetable mixture in a saucepan, add salt, sugar, mustard, vinegar, sunflower oil and ground pepper mixture. Mix well, bring to a boil and simmer over low heat for 1-1.5 hours, not forgetting to stir occasionally. The sauce should boil to the desired consistency, but not burn.

Pour the hot sauce into small, pre-sterilized jars and roll up. Turn the jars of Ivar sauce upside down, wrap them up and leave them to cool completely. It is recommended to store the finished sauce in a dark place at room temperature.
