Recently, you can find useful superfood - quinoa on supermarket shelves. It is added to soups, salads and confectionery. Today I'm sharing with you a delicious salad with broccoli and quinoa. It will suit everyone who is interested in proper nutrition!
Ingredients
- Quinoa (boiled) – 150 g
- Avocado - 1 piece
- Red beans (canned) – 200 g
- Broccoli - 300 g
- Salad mix - 80 g
- Yellow tomatoes - 150 g
- Blueberries - 2 art.l.
- Cashews (dried) – 50 g
- Grapefruit - half
- Olive oil - 3 tbsp.l.
- Lemon juice - 1 tsp.
- Ground black pepper - to taste
- Salt - to taste
Step-by-step cooking recipe
Rinse the broccoli under running water, dry it slightly and disassemble it into small inflorescences.
Peel the avocado, slice and sprinkle with lemon juice.
Peel the grapefruit from the films and carefully divide it into small pieces with your hands.
Put the canned beans in a colander and rinse.
Cut the yellow tomatoes into small slices.
In a wide salad bowl, mix broccoli, salad mix, avocado, quinoa, beans, tomatoes, blueberries, cashews and grapefruit.
Add salt, ground black pepper, olive oil and mix gently.
