Chop cucumbers, carrots, peeled potatoes and onions.
Rinse the pearl barley thoroughly, pour cold water and boil for 40 minutes after boiling.
Fry onions and carrots in vegetable oil until golden brown.
Pour potatoes, cucumbers and roast into a saucepan with pearl barley. Continue cooking for another 15 minutes.
Add salt, pepper and remove from heat. Insist the pickle under the lid for 20 minutes.
When serving, add fresh parsley to the plate.
