Clean the fish from the scales, gut, rinse and dry with paper towels.

Rub the dorado thoroughly on all sides with salt, Italian herbs, black pepper and leave for 10 minutes.

Scald lemon with boiling water, cut in half. Squeeze out the juice from one half, cut the other into small half-slices.

Brush the fish with oil, sprinkle with lemon juice and put on foil.

Put a few slices of lemon in the belly of the dorado, leave the rest for serving.

Add rosemary sprigs on top, cover tightly with foil and bake for 25 minutes in a preheated 180 degree oven.

Remove the top foil sheet and continue baking for another 5 minutes.
