We will cook in a deep frying pan or a saucepan of a suitable size. Fried squash caviar can be closed in jars for the winter or served on the table with bread. Instead of tomato paste, it is allowed to use fresh tomatoes, tomato sauce or juice.
Ingredients
- Zucchini - 500 g
- Carrots - 150 g
- Onion - 150 g
- Tomato paste - 2 tbsp.l .
- Vinegar - 1 art.l.
- Vegetable oil (odorless) – 2 tbsp.l.
- Ground black pepper - to taste
- Sugar - 1 tbsp.l.
- Salt - 1 tsp.
- Water - 150 ml
Step-by-step cooking recipe
Chop the zucchini and peeled onion.
Grate the carrots on a coarse grater.
Fry the onion in oil until transparent.
Add the carrots and cook for 7-10 minutes.
Add zucchini, sugar, salt and ground pepper. Simmer for 10 minutes, stirring occasionally.
Add water mixed with tomato paste and simmer for 20 minutes under the lid.
Puree the mass with an immersion blender until smooth.
Pour in the vinegar, stir and heat over low heat for 2-3 minutes.
Fill clean, dry jars with hot caviar and roll them up.
