Minestrone vegetable soups are Italian classics. They have a lot of advantages. Firstly, they are very easy to prepare. Secondly, you can add literally everything that is found in the house. Thirdly, the soup turns out to be very thick and satisfying, even if there is no meat in it.
Ingredients
- Vegetable broth - 2.5 l
- Pasta - 80 g
- Celery - 2 stems
- Carrots - 2 pieces
- Tomatoes - 2 pieces
- Green peas - 150 g
- Beans (canned) – 150 g
- Tomato paste - 1 art.l.
- Spices and seasonings - 2 tbsp.l.
- Parmesan - 80 g
Step-by-step cooking recipe
Bring the broth to a boil and add the pasta to it.
Finely chop all the vegetables. Peel the tomatoes first.
When the pasta is half done, put the vegetables, beans and tomato paste in a saucepan.
Cook until the vegetables are ready, season the soup and sprinkle with grated parmesan before serving.
