Ingredients
- Eggplant - 1 kg
- Vegetable oil - 250 ml
- Tomatoes - 1 kg
- Water - 125 ml
- Onion - 2 pieces
- Carrots - 2 pieces
- Garlic - 2 heads
- Salt - 1 art.l.
- Mustard Seeds - 1 tbsp.l.
- Bell pepper - 750 g
- Sugar - 125 g
- Vinegar - 125 ml
Step-by-step cooking recipe
Skip the tomatoes and go through a meat grinder. Randomly chop the eggplant, onion and carrot.
Bring the tomato mass to a boil. Add water, oil, salt, sugar and spices, and cook for 15 minutes on low heat.
Put the vegetables there and simmer for another half hour.
Pour in the vinegar, add garlic and simmer for another 5 minutes.
Roll the workpiece into sterilized jars.
