Pickled green tomatoes with garlic for winter
These pickled tomatoes will be appreciated by lovers of spicy snacks. Tomatoes turn out crispy, fragrant, quite burning, with a spicy carrot-garlic filling. Suitable for any side dish, meat dishes and poultry, as well as for a festive table. I share the recipe.
Ingredients
- Green tomatoes - 3,5 kg
- Carrots - 2 pcs.
- Garlic - 2 heads
- Black Pepper (peas) – 8 pcs.
- Water - 1,5 l
- Vinegar (9%) – 150 ml
- Sugar - 1/2 glasses
- Salt - 1,5 art.l.
Step-by-step cooking recipe
Peel the carrots and grate them on a fine grater. Chop the garlic.
Combine carrots and garlic, mix well.
Wash the tomatoes and dry them slightly. On each tomato, make an incision in the center to the middle.
Stuff tomatoes with carrot-garlic mixture.
Fill pre-sterilized jars with stuffed tomatoes. Add a couple of black pepper peas to each jar.
Prepare the marinade: boil water, add salt, sugar and vinegar.
Pour boiling marinade over tomatoes in jars to the top. Cover the jars with sterile lids and send them to be sterilized in a pot of boiling water (the sterilization time for 1 liter cans is 20-30 minutes from the moment the water boils in the pan).
After sterilization, roll up the jars with the workpiece, turn them upside down, wrap them up and leave them to cool completely. Store the cooled pickled green tomatoes in a cool dark place.
