Today I will share with you a recipe for a hearty salad with red beans. It is not only very tasty, but also healthy, since red beans contain a lot of protein and other necessary elements. This is especially important in winter. This salad is perfect for the winter table, when there are not so many fresh vegetables.
Ingredients
- Red Beans - 200 g
- Bell pepper - 600 yy
- Zucchini - 500 g
- Hot red pepper - 200 g
- Carrots - 2 pieces
- Onion - 2 pieces
- Tomatoes - 800 g
- Spices and seasonings - 1 art.l.
- Salt - 1 tbsp.l.
- Sugar - 1 art.l.
- Vegetable oil - 70 ml
- Vinegar - 60 ml
Step-by-step cooking recipe
Soak the beans overnight in advance and boil until soft.
Put tomatoes through a meat grinder. Add butter, sugar and salt, and bring to a boil.
Randomly chop the remaining vegetables. Add to the tomato mass and simmer for 20 minutes.
Add the beans, spices and vinegar, and simmer for another 10 minutes.
Roll the salad into sterilized jars.
