Speaking of classic sauces, I would like to focus on the recipe with prunes and tomatoes. This is a proven combination of Georgian cuisine, which has become popular all over the world over time. Try this sauce with meat or potatoes!
Ingredients
- Tomatoes - 1.5 kg
- Prunes - 500 g
- Salt - 1 tbsp.l .
- Sugar - 4 tbsp.l .
- Vinegar - 3 art.l.
- Garlic - 6 teeth
- Allspice - 3 peas
- Carnation - 3 bud
- Italian herbs - 1 tbsp.l.
- Chili pepper - 1 piece
Step-by-step cooking recipe
Peel the tomatoes, rinse the prunes and pass all the cherries through the meat grinder.
Bring the mass to a boil and boil for 20 minutes.
Add chopped garlic, chili and all other ingredients except vinegar.
Boil for another 10 minutes.
Let the sauce stand under the lid for 2 hours, rub through a sieve and boil again.
Boil it for 40-60 minutes on low heat, pour vinegar and roll it into sterile jars.
