Ingredients
- Eggplant - 2 pieces
- Olives - 120 g
- Tomatoes - 120 g
- Bell pepper - 1 piece
- Chili pepper - 1 piece
- Garlic - 2 teeth
- Italian herbs - 1 tsp.
- Spices and seasonings - 0.5 tsp.
- Bow purple - 0.5 pieces
Step-by-step cooking recipe
Cut all the vegetables into medium cubes.
Fry the eggplants on high heat for 2-3 minutes and add onion and bell pepper.
Fry for a couple more minutes, add tomatoes, turn down the temperature and simmer for 10 minutes under the lid.
Add olives, garlic, chili, spices and herbs, simmer for another 5 minutes and remove from heat.
