Chop the zucchini, carrots, peeled bell peppers and onions.
Make cross-shaped incisions at the base of tomatoes, scald with boiling water, peel and slice.
Put the corn in a colander and rinse thoroughly under running water.
Fry onions and carrots in vegetable oil until golden brown.
Add zucchini, corn, bell pepper and bay leaf. Cover and simmer for 10 minutes.
Add the cumin, tomatoes and continue cooking for another 5 minutes.
Add salt, pepper, turn off the heat and leave the dish under the lid for 10 minutes.
Serve the stew hot, sprinkled with chopped dill.
