You can cook an excellent eggplant salad for the winter without sterilization. Chop the vegetables, boil for about half an hour and add vinegar. This is quite enough to store the workpiece in a dark, cool place for up to two years.

Cut the eggplants and soak them in salted water for 20 minutes.

Chop tomatoes, peeled onions and bell peppers.

In a deep saucepan, mix all the vegetables, add sugar, salt, oil and spices. Cover with a lid and leave for 2 hours.

Boil the salad for 30 minutes over low heat, pour in the vinegar and immediately turn off the heat.

Arrange in jars, roll up, turn upside down and wrap up with a warm blanket.
