Bulgarian pepper lecho with carrots for winter

Delicious and fragrant lecho is the best way to prepare bell peppers for winter. Moreover, you can also add other vegetables to it, like carrots. It turns out a full-fledged vegetable salad, side dish, main dish or the basis for all kinds of stews and soups.
Ingredients
- Tomatoes - 1.5 kg
- Bell pepper - 1.5 kg
- Carrots - 500 g
- Vegetable oil - 100 ml
- Salt - 20 g
- Sugar - 60 g
- Apple cider vinegar - 60 ml
Step-by-step cooking recipe
Put tomatoes through a meat grinder.
Add butter, salt and sugar, and bring to a boil.
Put the randomly chopped pepper and grated carrots into the tomato.
Cook the lecho for about 40 minutes on low heat.
Pour in the vinegar and roll it into sterilized jars for the winter.
