The preparation of such a cake takes a lot of time. Various cakes are baked, praline and chocolate cream are prepared. But in the end, efforts are rewarded with an amazing result! I advise you to prepare the ingredients in advance and then it will be easier.
Ingredients
- Egg whites - 2 pieces
- Cream (33% fat content) – 3 tbsp.l.
- Almond flour - 1 glass
- Bitter chocolate - 50 g
- Powdered sugar - 3 tbsp.l.
- Starch - 2 tsp.
- Chicken eggs - 3 pieces
- Flour - 100 g
- Sugar - 3 art.l.
- Baking powder dough - 0,5 tsp.
Step-by-step cooking recipe
Heat cream and chocolate broken into pieces in a water bath
In a separate bowl, mix the whipped whites, powdered sugar, starch and almond flour.
Put the dough in a form lined with parchment paper and bake for 15-20 minutes at a temperature of 170 degrees.
Cut the resulting cake crosswise into two identical parts.
Beat eggs with sugar until fluffy.
Add flour, baking powder and mix.
Cover the split mold with baking paper, pour in the dough and bake for 30-35 minutes at 180 degrees.
Dry the hazelnuts in a frying pan and chop them in a blender.
Melt the sugar in a frying pan, add the hazelnuts and turn off after 1 minute.
Put the resulting mass on baking paper and cool.
Caramelized hazelnuts can be crushed by kneading well with a rolling pin.
Melt the chocolate in a water bath.
Beat the cream with a mixer at high speeds.
Mix whipped cream, chocolate and caramelized hazelnuts.
Put the sponge cake in a split mold, then the chocolate cake. Brush with a thick layer of praline.
Put the chocolate cake on top again and grease the praline. Send the cake to the refrigerator for 1.5 hours.
In a small saucepan, mix sugar and cocoa.
Add milk and melted butter. Bring to a boil and turn off immediately.
Remove the cake from the mold and pour over the cooled chocolate icing.
