Many housewives underestimate the preparation of the first dishes in vain. In winter, when not all vegetables are at hand, or when there is not enough time for cooking, such a homemade semi-finished product will become a real lifesaver. Will we prepare a pickle for the winter together?
Ingredients
- Cucumbers - 1,5 kg
- Tomatoes - 1,5 kg
- Carrots - 600 g
- Onion - 600 g
- Pearl barley - 250 g
- Vegetable oil - 375 g
- Vinegar (9%) – 8 art.l.
- Salt - 1,5 art.l.
- Sugar - 1 tbsp.l.
Step-by-step cooking recipe
Wash and peel the vegetables. Grate cucumbers and carrots on a coarse grater, cut tomatoes and onions into small cubes.
Combine the prepared vegetables in a cooking pot, add raw pearl barley, salt, sugar and vegetable oil. Mix well and leave for 3 hours at room temperature to form juice.
Put the pan with the salad on the fire, bring to a boil and simmer over low heat, stirring occasionally, under the lid for 1 hour.
5 minutes before cooking, add vinegar, mix well.
Pack the hot pickle into pre-sterilized half-liter jars, seal tightly, turn upside down and cool. Store the cooled workpiece in a cool, dark place.
