I must say right away, lavender marshmallows are so beautiful only thanks to the dye. But still, the dessert is incredibly fragrant and delicious. To prepare it, you will need dried lavender flowers, agar-agar and other standard ingredients.
Ingredients
- Lavender (dry flowers) – 2 tbsp.l.
- Applesauce - 250 g
- Egg whites - 50 g
- Sugar - 550 g
- Agar-agar - 8 g
- Food Coloring (purple) – 2 drop
- Water - 200 ml
Step-by-step cooking recipe
Pour boiling water over the dried lavender flowers, wrap them with a thick towel and insist for 10 hours.
Strain through a double layer of gauze.
Heat the resulting tincture in a water bath and mix with agar-agar.
Add sugar and boil for 3-5 minutes, stirring frequently.
Mix applesauce with chilled proteins and beat with a mixer until fluffy.
Pour in a thin stream of syrup with agar-agar, add the dye and whisk everything together for another 5 minutes.
Put the resulting mass in a pastry bag, put on a suitable nozzle and put the marshmallow on a silicone mat. Dry for 24 hours at room temperature.
