Did you know that marshmallows can be made with juice? At the same time, it will stabilize in just a couple of hours, which means you will not have to suffer in long waits. This recipe uses apple juice. Replace it with any other one you like.
Ingredients
- Apple juice (without pulp) – 500 ml
- Sugar - 380 g
- Agar-agar - 12 g
- Egg whites - 3 pieces
Step-by-step cooking recipe
Mix the cooled proteins with 220 g of sugar. Beat with a mixer at high speed until sharp peaks.
In a small saucepan, mix the hot juice, agar-agar and the remaining sugar. Boil for 3 minutes, stirring frequently.
Pour the hot syrup in a thin stream into the protein billet and beat with a mixer for 3-4 minutes.
Put the resulting mass in a pastry bag, put on a suitable nozzle and put the marshmallow on a silicone mat.
Dry for 2 hours at room temperature. Separate the finished marshmallows from the mat and connect them in pairs.
