Cut the duck into large pieces and pour cold water for 1 hour.
Rinse the meat again, put it in a deep saucepan and pour in cold water.
Add peeled onions and carrots, bay leaf, peppers. Cook for 2 hours on very low heat.
Add salt, ground pepper and finely chopped garlic. Continue to cook the jelly for another 30 minutes.
Discard the onion, carrot and bay leaf. Separate the meat from the bone, finely chop and arrange on plates.
Strain the broth through cheesecloth, add gelatin and mix until it completely dissolves.
Pour the broth into plates with meat and put it in the refrigerator for 10 hours.
