Pre-soak the beans for 4 hours.
Flip into a colander, rinse and place in a saucepan with fresh water. Boil for 40 minutes over low heat.
Take a little broth into a glass, drain the rest.
Peel the onion from the husk and finely chop it.
Put the onion in a preheated frying pan with oil and fry until transparent.
Transfer the boiled beans with the broth to a deep bowl.
Add the fried onion, peeled garlic clove and puree with an immersion blender.
Add salt, pour in the remaining broth and chop everything thoroughly again.
