For such canapes, I advise using a baguette or small buns to make the snack look neat. It is better to dry them a little in a frying pan, because the filling with eggplant and tomatoes will give a lot of juice.

- Eggplant - 1 piece
- Tomatoes - 2 pieces
- Pine nuts - 2 tbsp.l .
- Garlic - 2 clove
- Tomato paste - 1 tbsp.l.
- Greenery - 6 twigs
- Spices and seasonings - 0.5 tsp.
Step-by-step cooking recipe
Cut the eggplant into small cubes and fry until golden.
Add the finely chopped tomato and continue to fry for another 5 minutes on low heat.
Add tomato paste and crushed garlic, season and simmer for a couple more minutes.
Add chopped greens and pine nuts to the vegetables, mix again and put the mass on the baguette slices.
