The easiest and win–win way to make an eggplant snack is to fry it in circles and put something on top. This version with tomato salsa turns out to be very tasty and harmonious.
Ingredients
- Eggplant - 2 pieces
- Tomatoes - 1-2 pieces
- Garlic - 2 cloves
- Olive oil - 1 tbsp.l .
- Nuts (chopped) – 1 art.l.
- Italian herbs - 1 tsp.
- Basil - 2 leaflet
Step-by-step cooking recipe
Cut the eggplant into circles, add salt and leave for 10 minutes. Rinse and fry on both sides until tender.
Cut tomatoes into small cubes and add chopped basil and garlic.
Season tomatoes with oil and Italian herbs.
Put the salsa on eggplant slices and sprinkle with chopped nuts.
