An interesting way to give the classic sweet and sour tkemali more spicy and piquant notes is to add mute adjiki to it. You can vary the amount according to your taste. I offer you my favorite option as a base.
Ingredients
- Plums - 2 kg
- Sugar - 1 glass
- Salt - 0.5 tbsp.l .
- Ground coriander - 1 tsp.
- Paprika - 1 tsp.
- A mixture of peppers with peas (ground) – 1 tsp.
- Parsley - 1 bundle
- Cilantro - 1 bundle
- Garlic - 1 head
- Hot red pepper - 1 piece
- Adjika - 3 art.l.
Step-by-step cooking recipe
Remove the seeds from the plum and chop with a blender or a meat grinder.
Bring to a boil and boil for 10 minutes.
Add chopped pepper, herbs and garlic.
Boil the tkemali for another 10 minutes.
Add spices, boil the sauce for a couple more minutes and remove from heat.
