Ingredients
- Eggplant - 1.5 kg
- Tomatoes - 1 kg
- Carrots - 2 pieces
- Onion - 2 pieces
- Bell pepper - 500 g
- Vinegar - 4 tbsp.l.
- Salt - 1.5 tsp.
- Sugar - 40 g
- Vegetable oil - 80 ml
Step-by-step cooking recipe
Cut all the vegetables into medium pieces.
Fry onions and carrots in oil for about 5-7 minutes.
Add the eggplant and simmer for another 7 minutes.
Add pepper, tomatoes, salt and sugar. Simmer all together for another half hour.
Pour in the vinegar and roll the salad into sterilized jars.
