One of the main charms of solyanka is its variety. Its very name directly indicates this feature. For example, this time I want to share with you an amazing recipe with cucumbers, cabbage and mushrooms. If you like vegetable preparations, this is a great variety.
Ingredients
- Onion - 120 g
- Carrots - 150 g
- Cabbage - 600 g
- Cucumbers - 150 g
- Mushrooms - 400 g
- Vegetable oil - 60 ml
- Tomato paste - 30 g
- Garlic - 25 g
- Greenery - 15 g
- Salt - 5 g
- Spices and seasonings - 1 art.l.
- Vinegar - 1 art.l.
- Mushroom broth - 200 ml
Step-by-step cooking recipe
Randomly chop all the vegetables. Boil the mushrooms for 10 minutes in boiling water.
Fry the onion and carrot in oil until soft. Add the cabbage.
After 10 minutes, add the tomato, garlic, herbs, salt and spices.
Pour in the broth and simmer everything until the cabbage is half cooked.
Add mushrooms and cucumbers, and simmer for a couple more minutes.
Pour in the vinegar, simmer the hodgepodge for another 2 minutes and roll it into sterilized jars.
